Last weekend I was given a box of less-than-perfect produce filled with items about to be thrown away. They weren’t spoiled, just imperfect. The kale was a little brown, and the avocados — well, they were bruised and battered, really soft and icky (as you can see).


The friend handed over the box saying, “I don’t know if you can do anything with these.” But, I knew right when I saw them what would be their fate.
A few years back I had the pleasure of tasting a divine chocolate avocado pudding when I was on Home and Family on the Hallmark channel. The chef made it in the food segment. It was quite good, and very surprising. This recipe is a perfect use for those past-their-prime avocados.


It’s easy, fast to make, has minimal ingredients, and you can adapt it to your own taste and dietary considerations. Plus, avocado is one of those good-for-you fats! I made one batch using honey as a sweetener, the other using powdered sugar and adding cinnamon. Both are decadent, silky, creamy, and delicious.
This recipe very much depends of the size and flavor of your avocados. If you find it needs more cocoa, or sweetener, add more. Definitely taste as you go.
Optional extract flavors or liqueurs could include mint, orange, almond, rum, coffee, hazelnut, you name it!

Make sure the avocados are still fresh enough — don’t use any that have that “off” or smoky flavor, it will ruin the final product.

Decadent, silky, creamy, delicious and super versatile, this mousse/pudding is a surprising treat. Only use super soft avocados or you will have chunks in your dessert. And no one wants that. Cut avocados in half, remove pit, and scoop flesh into food processor. If there are any very pronounced bruises, cut away those parts. Process the avocados in the food processor until smooth. Add cocoa powder, and sugar, starting with 1 Tbsp. each. Add vanilla extract (or other extract). Mix until combined. Taste, add more cocoa or sugar, if desired. Refrigerate for at least 1 hour before serving. This recipe very much depends of the size and flavor of your avocados. If you taste it and find it needs more cocoa, or sweetener, add more.
